Harvesting & Processing

Hand Picking
Cherries are harvested by hand during the main season, typically from mid-August to December.
Wet Processing
After harvest, cherries are depulped and fermented in water tanks for around 12 hours to remove remaining mucilage before drying and further preparation.
This attentive approach supports clean, expressive cup quality.
